I don't do a lot of night shooting, but when I do I use RAW mode with manual settings (and a tripod and cable release). There's an interesting tutorial here - http://www.tofahrn-foto.de/index.php?lg=en&pg=tipps.dri but I haven't had a chance to try it out yet.

raw or jpeg, it doesnt matter. tripod, shutte rcable are a must. i use f8 set the camera to manual mode and under expose my s2 one half stop. my s3 is at no ev.
with the s3 i use f2 mode. but with the s2 i just let it go. i do most of my shooting at 18-35mm
