Creating a B/W Profile

Mrs. Clause brought me a 2200 and Pantone/Colorvision Spyder with lot's of software this year (I think I'll keep her around for a little while longer). As with all the new software, no manuals came with. So off to the Pantone/ Colorvision web sites for PDF's I go. My question is, how can I create a Black and White profile for my printer, and where can I download a Black and White step chart like Kodak's or the equivalent?
I would like to have a go at this if anyone has any ideas, or if it is even possible.
